Abstract
This study developed and validated a modified version of the Eating and Food Literacy Behaviors Questionnaire (EFLBQ) for adults with Type 2 Diabetes Mellitus (T2DM). Data were collected from adults with T2DM living in the 13 USDA Southern region states. Twelve diabetes-specific statements were developed and tested using exploratory factor analysis (EFA). The 140 participants answered the statements using a Likert scale (Never=1, Seldom=2, Often=3, and Always=4). The EFA returned six statements that clustered into two factors (1) Counting Carbs and Reading Labels and (2) Food Selections for Diabetes. The T2DM-specific statements were combined with the EFLBQ, forming a 25-item questionnaire called the Eating and Food Literacy Behaviors Questionnaire for Diabetics (EFLBQ-D) and administered to 307 individuals with T2DM.
