Abstract

Consumer access and choice for quality and affordable healthful foods at the retail-level is at the forefront of discussions related to the nutritional status of consumers in many communities across the United States. In Louisiana, many consumers live in food environments where retail options for quality and affordable healthful foods are limited, not affordable, or not available. Addressing these issues is complicated by the fact that literature focused on consumer access and choice for healthful foods at the retail-level in Louisiana is inadequate to play a significant role in addressing issues related to purchasing behavior for healthful foods faced by consumers. Understanding consumer access and choice is only one prerequisite of many to understanding purchasing behavior for healthful foods and improving the nutritional status of rural consumers. This study was conducted to describe retail-level purchasing behavior and related factors for healthful foods in various communities in Louisiana. The outcomes identified in this study can play a role in addressing issues related to consumer access and choice for healthful foods in communities not only in Louisiana, but across the U.S. Additionally, the outcomes of this study can assist in better understanding healthful food behavior among consumers to develop the long-term solutions necessary to ensure that consumers can acquire the foods necessary for healthy and sustainable living.
